I think that we can now close the debate.

Apologies to all: my text files were not getting the right creator
because I had left a ">" (write indicator) in my file's name. All works
well now.

As other has stated, it suffices to change the creator, this will however
mot appear until the finder has updated them. Closing and re-openeing the
window or doing a 'get info' on them will cause finder to update
