There's a Forth interpreter in the Open Firmware ROM. There used to be a MacForth, but I don't remember if it was Open Source. As of a few years ago, there was a free Modnla 2 compiler available from ETHZ. It came out fairly early in Mac history; I used it on my Mac Plus.
