[MacPerl] change editor

Hello Everybody

I am quite new to MacPerl and have got a different question than coding, 
where can I change the default editor, as, when I use "open apple E", 
simple text gets started,

in the settings, I dont seem to be able to find it.

And a question concerning MacJPerl, where is the option to change the 
encodings ?
