I go here for RFCs:

    http://www.cis.ohio-state.edu/htbin/rfc/INDEX.rfc.html

But often to just get simple protocol info, I use OTSessionWatcher
(http://www.stairways.com/) and watch what my mail/web/etc. programs are
doing, then I copy it.
